HALLOWEEN PUMPKIN LEFTOVERS

Have you carved yours yet? 

Funny thing is, me and kids carved ours last week, but because of how damp the house was because of the weather outside, they've rotted already and I had to throw them out few days ago 😁 I am really not bothered to carve anymore though, oops.
Anyway, we are not really big fans of Halloween as in Latvia it wasn`t a tradition to celebrate it. 👻

But, luckily I did save some ideas I had on what to do with them pumpkin leftovers once it is carved in that `shaky cut` shape of scary face or some other original shape 💁


So, you have got some seeds and some raw pumpkin cuts. It would be a waste to just throw it all in the bin, knowing how good pumpkin can be to your body...

Roasted pumpkin seeds in my childhood back in Latvia was a big hit, you could get different tasting ones in a shop. This was the first time I made them myself and they turned out well, of course, it`s not a big deal to roast them haha 😆

SALTY PUMPKIN SEEDS


  1. Clean the seeds from pulp and rinse them in a colander under cold water.
  2. Dry with paper towels.
  3. Spray seeds with coconut oil and toss with your choice of spices, I used salt only, but you can use pretty much anything, like sugar and cinnamon for a sweet taste..
  4. Spread them out on a baking sheet and bake for about 20-30 minutes in 180 degrees C (300F).


SAVORY PUMPKIN HUMMUS

This was the perfect way for me to use all that raw pumpkin. 

Approx. 364 cal to share with your friends or family.
Mix all of these ingredients in a food processor or blender and blend until smooth.
  1. 1 can of chickpeas, drained and rinsed
  2. 220g of boiled and pureed pumpkin
  3. 2 tbsp. olive oil
  4. 2 cloves minced garlic
  5. salt to taste, ½ tsp paprika
  6. 60ml lemon juice
Serve with anything you like, for example, pita chips, rye bread or some crisps.
