Eliza`s Original Protein Muffins

Welcome back to my little personal space where I love to share my experiences with you and you and you. *pointing all over the place*
This time it is my own original recipe of healthy version Muffins. I have been experimenting with this recipe for a while now, changing up the ingredients, adding more or less and I think this time I have nailed it, well... at least I think these are the best ones I have made so far. Healthy and tasty surely can be possible, right?

Not to give you too much to read at once, lets get to the recipe and how to make the Muffins! 🎂

You will need:


  • 2 ripe Bananas 
  • 70g Oats
  • 100g Soy yoghurt (by Alpro)
  • 1tsp. Baking soda
  • 10g Peanut Butter powder - or 40g peanut butter of your choice
  • 80g Nuts (I use cashew nuts, LOOOVE them)
  • 2 scoops (60g) Protein powder - Womens Best (salted caramel) Fit Whey was my choice.
  • Also can add some blueberries or other fruit, which I didn`t this time. But they will definitely make the muffins moist. 💦😁 

How to:

  1. Mish mush mash the bananas in a bowl;
  2. Add all the rest of the ingredients and mix together;
  3. Divide the mixture in baking trays (I am using the silicone ones, which are the best for getting the muffins out afterwards)
  4. Bake at 180℃ for about 15-20 minutes.
  5. Check if ready with sticking a toothpick in the muffin - if there`s nothing sticking to it then they are ready.



I forgot to mention, these are vegetarian friendly and almost vegan friendly (only needs to take out the protein). But if you are just there trying to avoid dairy products like me, these are the best sweet tooth killers and also that tummy fillers 💁
